Louisa “Choppy” Patterson of Over the Top (www.flynz.co.nz), the daughter of a second world war Spitfire pilot, has logged over 11,000 hours in her 30 years of flying helicopters. Based in New Zealand, she’s the woman to call for a bespoke heli-safari, taking in golf courses and remote glaciers. New for spring is a day safari (NZ$10,500, about £5,077, for two) to White Island, an extraordinarily beautiful volcano situated 48km from the east coast of North Island, in the Bay of Plenty, flying from Treetops Lodge on Rotorua – accompanied by an on-board volcanologist.
