If you’re lured more by the last of the summer sun than the promise of winter snowfall, then there’s the new 50-room Christophe Pillet-designed Hotel Sahrai (www.hotelsahrai.com; from about £160) in Fes – the style more sun-drenched Moroccan-mod than the city’s usual cacophony of courtyards and coloured tiles – and the 52-room Hôtel Jules César (www.hotel-julescesar.fr; from €310) in Arles, France, which has just had a whimsical Christian Lacroix revamp. Or tap into white walls and cobalt seas with Bright Blue Villas (www.brightbluevillas.com). Founded in spring 2014 by Athenian-born Natasha Martsekis, this new portfolio of rentals in Greece includes houses on the islands of Serifos, Sifnos and Kea. And on Santorini, she has access to family-friendly Villa Bellevue (from £1,382 a night for up to 16), which occupies a restored 15th-century wine factory close to the medieval island of Pyrgos.
