Another Latin American insider to know: Miraviva (www.miravivatravel.com), a new London-based operator specialising in the region. The firm is particularly hot on Cuba. Co-founder Charles Tyler knows it intimately, with your Havana nights designed around the paladares (private restaurants offering creative cuisine; Casa Vieja pictured) and casas particulares (homestays) – a scene invigorated by Raul Castro’s liberalising politics towards private enterprise, which since last year included the opening of the first private bars. The best of these, El Cocinero, in the upmarket Miramar district, has now added a hopping restaurant.
