One&Only Palmilla (oneandonlyresorts.com; from $735), down on Mexico’s Baja Peninsula, is a place whose name kept coming up – for years – via that still most trusted resource: friends, most of them back home in California, many of them long-time repeat guests at this storied resort on the Pacific. It’s hardly new, but is a vibrant example of age as wisdom in hospitality (though this old guard spent some $80m on a post-Hurricane Odile refresh in 2015). Staff, food and design are all lovely and tick the indulgence boxes, but it’s the grounds – all 250 acres of them, lush, mature and spectacularly lit at night – that mark it out in memory.
