To Edinburgh, where the grand old Roxburghe Hotel has been given a complete makeover and was reborn last month as The Principal Edinburgh Charlotte Square (phcompany.com; from £169). The late-Georgian buildings house 199 rooms, clad in very of-the-moment wainscot panelling and chic, chevron marble tiles, with sumptuous leather sofas. For cuisine, you’ll need to think beyond haggis: chefs Jonathan MacDonald and Daniel Spurr, the team behind Glasgow’s Ox and Finch, have a Levantine theme firmly in mind for BABA, the destination restaurant (complete with open barbecue pit) that debuts later this month.
