The windswept Freycinet Peninsula in Tasmania is home to a noteworthy new sanctuary. Saffire Freycinet (www.saffire-freycinet.com.au; from £755) sits on the edge of a protected national park, the source of many of its unique touches, such as the fresh squid and oysters (straight out of the pristine bay below) and just-out-of-the-ground vegetables.
There are timber beams and stone walls in all of the 20 contemporarily styled suites, and a menu of “Signature Experiences” inducts guests fully into the surrounding environment. The chef, Hugh Whitehouse, will do four courses on your terrace – or even host a campfire barbecue for you at the beach. Just tell him what your favourite dishes are.
