If travel is about getting deeper into nature, then the island of St Lucia has the edge on most of the Caribbean with its Unesco-protected Piton mountains. Nestled between them, surrounded by rainforest and white beach, is The Jalousie Plantation, which is reopening this winter as Sugar Beach, a Viceroy Resort (www.viceroyhotelsandresorts.com; from $300), after a three-year, $100m-plus rebuild, with a raft of new villas.
