Summer is here and with it comes picnic weather and the joys of eating alfresco. To celebrate, chef Theo Randall at the InterContinental on Park Lane is launching a Prosecco Picnic hamper menu with a choice of up to 10 dishes, giving gourmands the chance to feast on Italian delicacies while enjoying the English summer in London’s Green Park or Hyde Park, both of which are just a short stroll from the hotel address. Villa Sandi will provide the bubbles.
“I love summer, who doesn’t?” says Randall. “There is nothing better than enjoying the weather with friends, so to make it easy I have chosen a couple of simple yet delicious dishes that I would love to have on a picnic. The best dish for a summer picnic is panzanella – it can be made the day before and tastes better for it. The idea is that it uses day-old bread, marinated in fresh tomatoes, olive oil and a bit of garlic, and finished off with grilled red peppers, basil, capers, red wine vinegar and salted anchovies. It tastes great once it has been in the fridge overnight.”
The menu is typically sumptuous Italian fare: insalata mista, buffalo mozzarella and insalata di fagiolini verdi (a salad of green beans, Parmesan and Italian mixed leaves). Other dishes feature aubergines, zucchini, fennel and red peppers, Angus beef and smoked eel. “A simple combination of ripe Charentais melon with sweet but slightly salty prosciutto di Parma is one of my favourite combinations to enjoy outdoors – very refreshing,” says Randall. “I always bring some really good focaccia too.” To finish, there is a choice of soft chocolate cake or Amalfi lemon tart. And each hamper will be accompanied by a bottle of Villa Sandi Prosecco or Villa Sandi Sparkling Rosé.
The picnic costs £49 per person (minimum two people) and can be ordered in advance via the Theo Randall reservation line or by email. For families, Randall has created a Piccolo Picnics menu, offering smaller dishes at £15 per child.
