Limited to just eight people (€450 per person), booking is open now for these ultra-exclusive events, which will run from 6pm to 7:30pm and will give a unique insight into how the chef creates his signature Peruvian-Japanese fusion dishes such as albacore tuna sashimi with jalapeño peppers, black cod with miso and sashimi tacos.

Matsuhisa has also prepared a special five-course menu (€250 per person, excluding wine) to celebrate the restaurant’s one-year milestone, with fresh wasabi taking centre stage in a billing that is yet to be revealed. Expect something unexpected though from the man whose menu at Le Royal Monceau has included dishes such as algae tacos with black truffles, crispy oysters with caviar, and wagyu beef with foie gras gyoza and ponzu sauce, as well as an extensive selection of some of the world’s finest sakes.
