Some of my favourite cookery books are the oldest – Elizabeth David, Jane Grigson, Robert Carrier (cardiac arrest on a plate, I know, but oh, the flavours), Philippa Davenport (formerly of the FT), my old friend and colleague Jean Robertson – but they were all writing when metric measurements were strange, foreign inventions we didn’t have to grapple with. Cooking from them now requires the sort of mental agility that doesn’t come easily to me.
