Five weeks away from its opening, Spital Square, just off Bishopsgate, is the venue for the most exciting City restaurant launch for some time, and I am told bookings are already being taken. Galvin La Chapelle is the third London restaurant opened by the Galvin brothers, Chris and Jeff, and it will be a family affair: Chris’s wife Sara will be front-of-house.

Sara was kind enough to give me a tour of the site, in the lofty, beautifully restored St Botolph’s Hall: the huge Bonnet range is already in place for the main restaurant, as is a wood-fired oven for the smart café deluxe, and there are plans for a bar and an alfresco cigar terrace. No sign of the eponymous Jaboulet Hermitage yet – the new restaurant is a collaboration between the makers of the legendary La Chapelle and the Galvins – but I suspect that a few cases are making their way up the Rhône.
