Le Pressoir d’Argent in Bordeaux, Cheval Blanc in Basel and Comme Chez Soi in Brussels are among six restaurants flying their stellar head chefs to the Hilton’s Beijing Wangfujing hotel on November 22.

But this is no chefs’ convention: for one night only, Peter Knogl (Cheval Blanc), who this year won the Gault Millau Swiss Guide’s prestigious Chef of the Year award, and Christian Sinicropi (La Palme d’Or), who has worked alongside the likes of Christian Willer and Sylvain Duparc, will, among others, be pooling their expertise to whip up a seven-course feast for discerning diners in the decadent Lantern Ballroom.

The line-up of dishes – from Dublin bay prawns with cumbawa zest and truffled eggplant mousse, through traditional Sartù di riso with Neapolitan ragoùt, to white-chocolate cherry mille-feuille – is already setting gourmet pulses racing.
