In the high plains of the Parc des Volcanes d’Auvergne in France, a simple but charmingly authentic eco-lodge has opened its doors. Les Instants d’Absolu (www.chicretreats.com; from £140) offers a fully sustainable spa escape. It has modest rooms furnished in hand-woven linens, cashmeres, and sheep- and goatskin rugs; a small hammam, and a restaurant (pictured) serving food grown and raised in the surrounding fields.
