October sees the unveiling of the newly made-over Metropole (www.sofitel.com; doubles from £138) in Hanoi. A flagship for Sofitel’s new Legend brand (others will include the Old Cataract Hotel in Aswan, the Winter Palace in Luxor and the Palais Jamai in Fez), its take on faux-French colonial elegance – ceiling fans, louvred shutters and lots of black lacquer – has erred on the side of staid and won’t appeal to everyone, but the city and its culinary culture remain as exotic as they were when Graham Greene wrote The Quiet American here in 1951.
